The vineyards of Domaine Pabiot are located on the slopes of the right bank along the upper reaches of the Loire, in the hills of Les Loges, against Sancerre. The vineyards border the village of Pouilly (sûr Loire). Jonathan Pabiot (24 years old) is the son of Didier Pabier, the 'great' winegrower from Poully Fumé. Jonathan is the 4th generation winemakers in the family. The ancestral know-how of the winemaker's family, modern refined techniques and precision deployed to continue the quality of the Pouilly-Fumé as it has always been.
White - elegant, dry wine. Greenish yellow hue. Full, broad nose with minerals and white vegetables (asparagus). Firm, mineral flint flavor with good fruit and fresh acidity.
Food pairing: Fish, asparagus, Asian fish based dishes, goat cheese.
